Keto Cinnamon Rolls

If you haven't taken a look at my other Fat Head recipe, give it a look! Fat Head dough is so versatile and can be great to make recipes that you may be missing on keto!

 

Obviously, the limitation to Fat Head dough is that it contains a lot of cheese, so if you are dairy you may opt for Almond Cheese alternatives but please note that I have not tried this yet and I am not sure how it will change the outcome!

In hind site, I would make some changes to this recipe to make it a little lower calorie and make the icing a little sweeter.  It is pretty calorie dense so if you are tracking, take that into consideration!

Fat Head Cinnamon Roles

Ingredients

Dough:

  • 1 ¾ cup Mozzarella Cheese
  • ¾ cup Almond Flour
  • 2 Tbsp Cream Cheese
  • 1 Egg

Filling:

  • 2 Tbsp Kerrygold Butter
  • 2 Tsp Truvia Brown Sugar Blend
  • 1 Tsp Ground Cinnamon

Icing

  • 2 Tbsp Cream Cheese
  • 1 Tbsp Kerrygold Butter
  • 2 Tbsp Pili Nut Butter (Use Code: THEKETOLOGIST for 10% off)
  • 1/8 Tsp Vanilla Extract

Instructions

Filling

  1. Melt the butter in the microwave.
  2. Add Truvia brown sugar and cinnamon and mix.

Dough

  1. Preheat oven to 350F.
  2. Mix the mozzarella cheese and almond flour in a microwave safe bowl.
  3. Add the cream cheese.
  4. Microwave on high for 1 minute.
  5. Stir the mixture and then microwave again on high for 30 seconds.
  6. Remove and add the egg
  7. Mix until combined.
  8. Place the dough ball on a sheet of parchment paper and place another sheet on top.
  9. Using a rolling pin, roll out the dough to about ¼ inch thickness.
  10. Spread the filling with a spoon across the dough.
  11. Roll the dough tightly so it looks like a log.
  12. Take a knife and cut the log into 6 pieces.
  13. Place cinnamon rolls on a baking sheet and bake until slightly browned.

Icing

  1. Melt the butter in the microwave.
  2. Mix cream cheese, melted butter, Pili Nut Butter, and vanilla extract in a bowl.

Completion

  1. Once the cinnamon rolls have browned, remove from oven and top with icing.
  2. Tip: I microwaved the icing to make it warm!
  3. ENJOY!
