Keto Focaccia Bread

Another delicious recipe made by my sister, Momma Low Carb. This focaccia bread is made out of fat head dough. Fat head dough is a pretty incredible low carb recipe that produces a multi-purposed dough that very closely mimics regular dough. The only problem with this recipe is that it involves a lot of dairy. For this reason this recipe should be used as a treat, not as a staple in your diet. Also worth mentioning is that there is some lunch meat being used in this recipe. Many lunch meats are highly processed which is another reason to limit this recipe but there are better lunch meat brands out there that are not as processed and these make the best option if possible!


Fat Head Dough(top): 

1 ¾ cup Mozzarella 

¾ cup Almond Flour 

2 Tbsps Cream Cheese 

1 Egg 

1 tsp Salt 

1 tsp Garlic, minced 

Toppings: 1/4 cup cheddar cheese  

Fat Head Dough (bottom): 

1 ¾ cup Mozzarella 

¾ cup Almond Flour 

2 Tbsps Cream Cheese 

1 Egg 

1 tsp Salt 

1 tsp Garlic, minced 

Meat and Toppings for the Middle: 

½ lb Oven Roasted Turkey Lunch Meat 

½ lb Black Forrest Ham Lunch Meat 

¼  lb Provolone Cheese Slices 

6 Romaine Lettuce Leaves 

1 Avocado, smashed


Per slice

Calories: 309

Fat: 23g

Carbs: 5.5g

Fiber: 2.5g

Protein: 20g


  1. Preheat oven to 350F. 

  2. To make the fat head dough(top), mix the mozzarella cheese and almond flour in a microwave safe bowl. 

  3. Add the cream cheese and microwave on high for 1 minute. 

  4. Stir the mixture and then microwave again on high for 30 seconds. 

  5. Remove and add the egg and seasonings and mix until combined.

  6. Spray a 9in round pan with nonstick spray and place parchment paper in the bottom of the pan and spray the paper. 

  7. Press the dough down into the pan evenly. 

  8. Evenly top with cheddar cheese. and Place in the oven and cook for about 15 minutes or until the edges are brown and the middle is firm. 

  9. Remove from the oven and run a knife around the edges and carefully flip out onto a cooling rack. 

  10. To make the fat head dough(bottom), repeat steps for the top, minus the cheese topping.  

  11. Once the "buns" are cooled you can assemble your sandwich. Begin to layer the meats and cheese evenly onto the bottom bun. Top the meat and cheese with the lettuce. Spread the avocado on the bottom of the top bun and place on top of the sandwich. 

  12. Cut into 12 even slices and serve.
