Keto Taco Pie

This is such a simple yet tasty meal my wife found on Pinterest posted by Mother Would Know, who reported finding it from the Everyday Ketogenic Kitchen cookbook by Carolyn Ketchum. This taco pie is everything we could have imagined and more! Such an easy dish to make for two, with even some left overs for lunch the next day, or perfect size for a family dinner together. It was so good, we even discussed making this for a breakfast quiche, just swapping out the taco meat with some breakfast sausage or chorizo. Although we’re not the greatest at presentation (a pleasant “dollop of daisy” and neatly sliced avocado is harder than it looks), this pie was definitely worth mentioning and recommending to anyone who wants to try something new with ground beef. Most of the ingredients you might even find in your fridge already!

Ingredients:


Taco seasoning: 

1 tablespoon black pepper

2 tablespoons chilli powder  

2 teaspoons cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon oregano

1 tablespoon paprika

1 tablespoon salt  

Taco Pie: 

1 lb ground beef

6 large eggs

1 cup heavy cream

1 cup cheddar cheese

2 garlic cloves

Instructions:

  1. Preheat oven to 350F. 

  2. To make the taco seasoning (for the ground beef), mix all spices together in a small bowl and set aside.

  3. Cook the ground beef in a skillet over the stovetop at medium heat until brown. Once beef is thoroughly cooked, mix in the taco seasoning. Stir until beef looks evenly flavored with the seasoning. 

  4. Transfer the ground beef to a greased, 9inch baking dish. Spread evenly.

  5. In a separate large bowl, combine eggs, heavy whipping cream and minced garlic cloves. Pour mixture over the meat in baking dish.  

  6. Then spread the cheese evenly throughout the dish to cover the meat and egg.

  7. Place in the oven to cook for 30 minutes, or until the edges are golden brown and middle is firm.

  8. Cut into 8 even slices and serve

  9. For additional flavor to your taco pie, it is great to add some sour cream, guacamole, salsa, or anything that you prefer with a taco!
